Ingredients

  • 1.5 lbs Vitality Burger ground beef blend
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (14.5 oz each) diced tomatoes with juices
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 1 cup beef broth or water
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp cayenne pepper (optional for heat)
  • 2 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, green onions, avocado slices

Instructions

  1. Sauté the Vitality Burger:
    In a large pot or Dutch oven, heat olive oil over medium heat. Add the Vitality Burger ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
  2. Add Aromatics:
    Stir in the diced onion, garlic, and bell peppers. Cook for 5–7 minutes until the vegetables are softened and fragrant.
  3. Build the Flavor:
    Stir in the tomato paste, chili powder, cumin, smoked paprika, oregano, black pepper, salt, and cayenne (if using). Cook for 1–2 minutes to toast the spices and deepen the flavor.
  4. Simmer the Chili:
    Add the diced tomatoes, kidney beans, black beans, and beef broth. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for at least 30–45 minutes, stirring occasionally. (The longer it simmers, the richer the flavor!)
  5. Taste and Adjust:
    Taste your chili and adjust the seasoning as needed. If it’s too thick, add a splash more broth or water.
  6. Serve and Top:
    Ladle into bowls and top with shredded cheese, a dollop of sour cream, diced green onions, or avocado slices for the ultimate bowl of comfort!
