VitalityBurger Stuffed Bell Peppers

Ingredients
- 4 large bell peppers (any color)
- 1 lb Vitality Burger ground beef blend
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
- 1 cup shredded mozzarella or cheddar cheese (plus extra for topping)
- 1 can (14.5 oz) diced tomatoes, drained
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish. - Prepare the Peppers:
Cut the tops off the bell peppers and remove the seeds and membranes. Brush the outsides with olive oil and place them upright in the baking dish. - Cook the Vitality Burger Filling:
In a large skillet over medium heat, cook the Vitality Burger ground beef, diced onion, and minced garlic until the meat is browned and the onion is tender. Drain any excess grease. - Add the Flavor:
Stir in the drained diced tomatoes, tomato paste, Worcestershire sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 2–3 minutes until everything is heated through. Stir in 1 cup of shredded cheese. - Stuff the Peppers:
Spoon the beef mixture into each bell pepper, packing it tightly. Sprinkle a little extra cheese over the top of each stuffed pepper. - Bake:
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for another 5–10 minutes, until the cheese is melted and bubbly. - Serve and Enjoy:
Let cool slightly before serving. Garnish with fresh parsley or a dollop of sour cream if desired!
