VitalityBurger Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers (any color)
  • 1 lb Vitality Burger ground beef blend
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
  • 1 cup shredded mozzarella or cheddar cheese (plus extra for topping)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare the Peppers:
    Cut the tops off the bell peppers and remove the seeds and membranes. Brush the outsides with olive oil and place them upright in the baking dish.
  3. Cook the Vitality Burger Filling:
    In a large skillet over medium heat, cook the Vitality Burger ground beef, diced onion, and minced garlic until the meat is browned and the onion is tender. Drain any excess grease.
  4. Add the Flavor:
    Stir in the drained diced tomatoes, tomato paste, Worcestershire sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 2–3 minutes until everything is heated through. Stir in 1 cup of shredded cheese.
  5. Stuff the Peppers:
    Spoon the beef mixture into each bell pepper, packing it tightly. Sprinkle a little extra cheese over the top of each stuffed pepper.
  6. Bake:
    Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for another 5–10 minutes, until the cheese is melted and bubbly.
  7. Serve and Enjoy:
    Let cool slightly before serving. Garnish with fresh parsley or a dollop of sour cream if desired!
