Chili à la VitalityBurger

Ingredients
- 1.5 lbs Vitality Burger ground beef blend
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (14.5 oz each) diced tomatoes with juices
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp tomato paste
- 1 cup beef broth or water
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp cayenne pepper (optional for heat)
- 2 tbsp olive oil
- Optional toppings: shredded cheese, sour cream, green onions, avocado slices
Instructions
- Sauté the Vitality Burger:
In a large pot or Dutch oven, heat olive oil over medium heat. Add the Vitality Burger ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease. - Add Aromatics:
Stir in the diced onion, garlic, and bell peppers. Cook for 5–7 minutes until the vegetables are softened and fragrant. - Build the Flavor:
Stir in the tomato paste, chili powder, cumin, smoked paprika, oregano, black pepper, salt, and cayenne (if using). Cook for 1–2 minutes to toast the spices and deepen the flavor. - Simmer the Chili:
Add the diced tomatoes, kidney beans, black beans, and beef broth. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for at least 30–45 minutes, stirring occasionally. (The longer it simmers, the richer the flavor!) - Taste and Adjust:
Taste your chili and adjust the seasoning as needed. If it’s too thick, add a splash more broth or water. - Serve and Top:
Ladle into bowls and top with shredded cheese, a dollop of sour cream, diced green onions, or avocado slices for the ultimate bowl of comfort!
